1 1/2 cups water
1/2 cup white wine
1 lemon
1 onion
1/2 celery rib
1 garlic clove
1 teaspoon black peppercorns
4 sprigs fresh thyme - (to 5)
1 bay leaf
Directions: one line for each direction. When saved the lines will be numbered.
Combine all ingredients in a saucepan and bring to a boil over high heat. Reduce the heat and simmer for 8 minutes.
Strain or use chunky the first time, then strain through a fine mesh and either refrigerate for up to 3 days or freeze for up to 2 months. Either way, be sure to bring to a boil before reusing.
This recipe yields 2 cups.
