4 medium potatoes
1 package frozen chopped spinach - (10 oz)
1 package Athenos Traditional Crumbled Feta Cheese
1 teaspoon freshly-ground black pepper
Directions: one line for each direction. When saved the lines will be numbered.
Bake potatoes at 400 degrees for 50 minutes or until tender.
Cut 1/2-inch lengthwise slice off top of potato; discard. Carefully scoop out pulp into small bowl. Add remaining ingredients; mix well. Divide mixture and evenly spoon back into 4 potato skins.
Bake at 400 degrees for 10 additional minutes or until thoroughly heated.
This recipe yields 4 servings.
Great Substitutes: Try Athenos Crumbled Feta Cheese with Peppercorn, Garlic & Herb, or Basil & Tomato in place of Traditional Feta Cheese.
Special Extra: Serve potatoes topped with sliced olives.
