Ingredients:

4                   center-cut salmon fillets - (6 oz ea)
4     tablespoons   olive oil
                    Salt
                    Freshly-ground black pepper
3                   ripe plum tomatoes
1                   red bell pepper
1                   yellow bell pepper
1                   hothouse (seedless) cucumber
                    and cut into 1/2" cubes
2                   celery ribs
1/4   pound         green beans
                    and blanched
1     small         red onion
3     tablespoons   chopped flat-leaf parsley
1     tablespoon    red-wine vinegar
1/2   cup           imported black olives
Directions: one line for each direction. When saved the lines will be numbered.
  1. Brush the salmon fillets with 2 tablespoons of the olive oil, sprinkle with salt and pepper and set aside.

  2. In a bowl, combine the tomatoes, peppers, cucumber, celery, green beans, onion and 2 tablespoons parsley. Set aside.

  3. In a separate bowl, whisk 2 tablespoons of oil with the vinegar; season with salt and pepper. Reserve.

  4. Oil the grill rack. Place the salmon, flesh-side down, on the grill over hot coals, 3 inches from the heat source. Cook for 8 to 10 minutes, turning after 4 minutes. The salmon should be lightly browned and crisp on the surface, cooked through at the edges and rarer in the center.

  5. Toss the reserved vegetables with the whisked oil and vinegar, then divide among 4 dinner plates, arranging in the center. Place a salmon fillet atop each salad portion. Divide the olives among the plates. Garnish with the remaining chopped parsley. Serve immediately.

  6. This recipe yields 4 servings.
