Ingredients:

1 1/2 cups          skim buttermilk
1 1/3 cups          whole bran cereal
1 3/4 cups          whole-wheat flour
2     teaspoons     cinnamon
1     teaspoon      baking soda
1     teaspoon      baking powder
1/2   teaspoon      salt
1/2   cup           light brown sugar - (firmly packed)
12                  pitted prunes
1                   egg
3     tablespoons   vegetable oil
24                  pitted dates
2                   apples
Directions: one line for each direction. When saved the lines will be numbered.
  1. Preheat the oven to 400 degrees. Spray eighteen 2 3/4-inch muffin cups with nonstick cooking spray.

  2. In a large bowl, combine the buttermilk and cereal; let stand 5 minutes.

  3. Meanwhile in a medium bowl, combine the flour, cinnamon, baking soda, baking powder and salt.

  4. Add the sugar, prunes, egg and oil to the cereal mixture; mix well with a wooden spoon. Stir in the dates, apples and the flour mixture until just combined (do not overmix).

  5. Spoon the batter evenly into the cups, filling each about two-thirds full. Bake until golden and a toothpick inserted in the center comes out clean, 20 to 25 minutes. Cool on a rack 10 minutes; remove from the cups and cool completely on the rack.

  6. This recipe yields 18 servings.
