Ingredients:

1                   carrot
1     medium        zucchini
4                   scallions
1/4   cup           chopped mushrooms
2                   eggs
1/4   cup           julienned lean ham
1/8   teaspoon      freshly-ground black pepper
1/3   cup           shredded nonfat sharp cheddar cheese
Directions: one line for each direction. When saved the lines will be numbered.
  1. Spray a large nonstick skillet with nonstick cooking spray; heat. Add the carrot, zucchini, scallions and mushrooms; cook, stirring constantly, until the vegetables are softened, 5 to 6 minutes.

  2. Add the eggs, ham and pepper; cook, stirring constantly, until the eggs are cooked, 2 to 3 minutes. Add the cheese and cook, stirring constantly, until the cheese is melted, about 30 seconds.

  3. This recipe yields 2 servings.
