Ingredients:

2     cups          fat-free egg substitute
1     can           no-salt-added stewed tomatoes -
1                   onion
1/2                 green bell pepper
1/2   cup           boiled ham strips
3                   fat-free flour tortillas - (6" dia)
3/4   cup           shredded reduced fat Monterey Jack cheese
Directions: one line for each direction. When saved the lines will be numbered.
  1. Preheat the oven to 350 degrees. Spray a 10- by 6-inch baking dish with nonstick cooking spray; set aside.

  2. In a medium bowl, combine the egg substitute, tomatoes, onion and pepper. Stir in the ham and tortilla strips until the tortillas are just moistened.

  3. Pour into the dish; sprinkle with the cheese and bake until a knife inserted in the center comes out clean, about 40 minutes.

  4. This recipe yields 6 servings.
