Ingredients:

2                   shallots
2                   garlic cloves
4     cups          torn cleaned spinach - (abt 1 bunch)
2                   tomatoes
1/4   cup           minced basil
3/4   cup           shredded part-skim mozzarella cheese
1/4   teaspoon      coarsely-ground black pepper
2     cups          hot cooked spaghetti
2     tablespoons   grated Parmesan cheese
Directions: one line for each direction. When saved the lines will be numbered.
  1. Spray a large nonstick skillet with nonstick cooking spray; heat. Add the shallots and garlic; cook, stirring as needed, until softened, about 5 minutes.

  2. Add the spinach, tomatoes and basil; toss lightly. Reduce the heat and simmer, covered, until the spinach is wilted, 4 to 5 minutes. Remove from the heat. Add the mozzarella cheese and pepper; toss to combine.

  3. Place 1 cup of the spaghetti on each of 2 plates. Top with the spinach mixture and serve, sprinkled with the Parmesan cheese.

  4. This recipe yields 2 servings.
