Ingredients:

1/2   package       frozen chopped spinach - (10 oz pkg)
1     cup           nonfat ricotta cheese
2                   garlic cloves
1     teaspoon      dried basil
1/2   teaspoon      dried oregano
2     teaspoons     olive oil
1     medium        zucchini
1                   red bell pepper
                    cut into 1" strips
1                   onion thinly sliced
4     large         whole wheat pita breads
1/2   cup           no-salt-added tomato sauce
1     cup           shredded part skim mozzarella cheese
Directions: one line for each direction. When saved the lines will be numbered.
  1. Preheat the oven to 400 degrees.

  2. In a medium bowl, combine the spinach, ricotta cheese, garlic, basil and oregano.

  3. In a large nonstick skillet, heat the oil. Add the zucchini, pepper and onion; cook, stirring as needed, until tender-crisp, about 4 minutes.

  4. Arrange the pita breads on a nonstick baking sheet. Spread 1/2 cup of the spinach mixture over each pita bread; top each with the tomato sauce and the sauteed vegetables. Sprinkle the mozzarella cheese evenly over each. Bake until heated through and the cheese is melted, about 15 minutes.

  5. This recipe yields 4 servings.
