1 pound lean ground beef (10% or less fat)
1 1/4 cups low-sodium salsa
3/4 cup quick-cooking oatmeal
1 carrot
2 plum tomatoes
1/2 cup coarsely-chopped mushrooms
Directions: one line for each direction. When saved the lines will be numbered.
Preheat the oven to 350 degrees. Spray a loaf pan with nonstick cooking spray.
In a large bowl, combine the beef, salsa, oatmeal, carrot, tomatoes and mushrooms. Shape the mixture into a loaf.
Place the loaf in the pan. Bake until browned and a knife inserted in the center comes out clean and hot, about 1 hour and 5 minutes. Let stand about 10 minutes before slicing.
This recipe yields 6 servings.
