Ingredients:

1     tablespoon    olive oil
2                   onions
3                   garlic cloves
1     pound         shrimp
3     medium        zucchini
1     cup           low-sodium chicken broth
1     tablespoon    dried oregano
1/2   teaspoon      freshly-ground black pepper
4     cups          hot cooked farfalle
2                   tomatoes
2     tablespoons   grated Parmesan cheese
Directions: one line for each direction. When saved the lines will be numbered.
  1. In a large nonstick skillet, heat the oil. Add the onions and garlic; cook, stirring as needed, until softened, about 5 minutes.

  2. Add the shrimp, zucchini, broth, oregano and pepper; bring to a boil. Reduce the heat and simmer, uncovered, stirring as needed, until the shrimp turn pink, 3 to 5 minutes.

  3. Stir in the farfalle and tomatoes; cook, stirring as needed, until heated through, 2 to 3 minutes. Serve, sprinkled with the cheese.

  4. This recipe yields 4 servings.
