Ingredients:

1     serving       cooking spray
                    = (5 one-second sprays per serving)
2 1/2 ounces        raw turkey sausage
1     large         onions
1     medium        celery
1     small         green peppers
1/4   teaspoon      cayenne pepper
1/2   teaspoon      dried thyme
1     teaspoon      table salt
1/2   teaspoon      freshly-ground black pepper
2     medium        garlic cloves
2     medium        cooked skinless chicken breasts
28    ounces        canned whole peeled plum tomatoes
2     cups          fat-free chicken broth
1     cup           uncooked long-grain white rice
Directions: one line for each direction. When saved the lines will be numbered.
  1. Coat a large, nonstick saucepan with cooking spray. Over high heat, sauté sausage until crispy on edges. Add onion, celery and green pepper; sauté until tender.

  2. Reduce heat and stir in cayenne, thyme, salt, pepper and garlic; sauté until garlic is fragrant.

  3. Stir in chicken, tomatoes, broth and rice. Bring to a simmer, cover and let cook until rice is tender, about 20 minutes.

  4. This recipe yields 4 servings; about 1 1/4 cups per serving.
