1 pound green beans
1 can no-salt-added diced tomatoes - (14 1/2 oz)
2 onions
1 small all-purpose potato
2 teaspoons dried oregano
2 teaspoons extra-virgin olive oil
1/4 teaspoon salt
1/4 teaspoon freshly-ground black pepper
Directions: one line for each direction. When saved the lines will be numbered.
In a large nonstick saucepan, bring the beans, tomatoes, onions, potato, oregano, oil, salt and pepper to a boil.
Reduce the heat and simmer, covered, stirring as needed, until the vegetables are tender and the flavors are well blended, about 1 hour.
