Ingredients:

1     serving       cooking spray
                    = (5 one-second sprays per serving)
12    ounces        uncooked boneless skinless chicken breasts
4     medium        scallions, green and white parts
2     tablespoons   coarsely-chopped lemon grass
                    = (buy 1 stalk, discard tough outer
                    portion and coarsely chop interior)
2     medium        garlic cloves
1     cup           fat-free reduced-sodium chicken broth
2     tablespoons   low-sodium soy sauce
1     teaspoon      freshly-grated lime zest
1/2   teaspoon      red pepper flakes
8     ounces        uncooked whole-wheat spaghetti
1/2   cup           fresh cilantro leaves
Directions: one line for each direction. When saved the lines will be numbered.
  1. Coat a large nonstick skillet or wok with cooking spray and set pan over medium-high heat. Add chicken and cook 5 minutes, until golden brown on all sides.

  2. Add scallions, lemongrass and garlic and stir-fry 2 minutes.

  3. Add broth, soy sauce, zest and red pepper flakes and bring to a simmer. Simmer until chicken is cooked through, about 5 minutes.

  4. Add spaghetti and cook 1 minute to heat through. Remove from heat and stir in cilantro.

  5. This recipe yields 4 servings; about 1 cup per serving.
