Ingredients:

1     serving       cooking spray
                    = (5 one-second sprays per serving)
1     small         onion
1     small         sweet red pepper
1     medium        garlic clove
1     pound         boneless skinless chicken thighs
1/4   teaspoon      saffron
1/4   teaspoon      ground cinnamon
1/8   teaspoon      ground cumin
1/4   teaspoon      table salt
1/4   teaspoon      freshly-ground black pepper
1/8   teaspoon      red pepper flakes
14 1/2ounces        canned tomatoes
1 1/4 cups          fat-free chicken broth
3/4   cup           cooked Israeli-variety couscous
Directions: one line for each direction. When saved the lines will be numbered.
  1. Coat a medium nonstick pot with cooking spray. Add onion, red pepper and garlic; sauté, stirring frequently, for 5 minutes.

  2. Add chicken and brown lightly on both sides, about 4 minutes.

  3. Stir in saffron, cinnamon, cumin, salt, pepper and red pepper flakes; cook for 30 seconds.

  4. Stir in diced tomatoes, broth and couscous. Simmer until chicken is cooked through, about 10 minutes.

  5. This recipe yields 4 servings; about 1 1/4 cups per serving.
