Ingredients:

1     serving       olive oil cooking spray
                    = (5 one-second sprays per serving)
1     pound         lean veal loin boneless chops
1/8   teaspoon      table salt
1/8   teaspoon      freshly-ground black pepper
1/2   cup           reduced-sodium fat-free chicken broth
14    ounces        canned artichoke hearts without oil
2     tablespoons   capers
2     tablespoons   fresh lemon juice
1     teaspoon      dried oregano
4     tablespoons   chopped fresh parsley
Directions: one line for each direction. When saved the lines will be numbered.
  1. Coat a large nonstick skillet with cooking spray and set pan over medium-high heat. Season both sides of veal chops with salt and pepper. Add veal to hot pan and cook until golden brown, about 2 minutes per side.

  2. Add broth, artichoke hearts, capers, lemon juice and oregano to pan, and bring to a simmer. Simmer until veal is cooked through, about 8 to 10 minutes.

  3. Remove from heat and add parsley. Serve hot.

  4. This recipe yields 4 servings; about 3 ounces of veal and 1/2 cup of artichoke mixture per serving.
