Ingredients:

1     serving       cooking spray
                    = (5 one-second sprays per serving)
1     small         white onion
1                   average jalapeño pepper
                    and minced (do not touch seeds with bare
                    hands)
1     medium        garlic clove
1 1/4 pounds        large shrimp
                    and tails removed
3     medium        tomatoes
1/2   teaspoon      table salt
1/4   teaspoon      freshly-ground black pepper
1     tablespoon    fresh lime juice
2     teaspoons     munced fresh cilantro
Directions: one line for each direction. When saved the lines will be numbered.
  1. Coat a 12-inch nonstick skillet with cooking spray. Add onion, jalapeño and garlic. Sauté over medium-high heat for 2 minutes. Add shrimp and sauté 1 minute, stirring frequently.

  2. Add tomatoes, salt and pepper. Reduce heat to low and simmer 5 minutes. Stir in lime juice and cilantro. Simmer 1 to 2 more minutes so flavors blend.

  3. This recipe yields 4 servings; about 1 cup per serving.
