Ingredients:

2     teaspoons     olive oil
1 1/3 cups          brown rice
2                   garlic cloves
2     cups          low-sodium vegetable broth
1     can           no-salt-added diced tomatoes - (14 1/2 oz)
8                   scallions
Directions: one line for each direction. When saved the lines will be numbered.
  1. In a large nonstick saucepan, heat the oil. Add the rice and garlic; cook, stirring as needed, until the rice is lightly browned, about 2 minutes. Add the broth and tomatoes; bring to a boil.

  2. Reduce the heat and simmer, covered, until the rice is tender, about 50 minutes, stirring occasionally during the last 15 minutes and adding water if necessary to prevent the rice from sticking to the bottom of the pan. Add the scallions and fluff the mixture with a fork.

  3. This recipe yields 4 servings.
