Ingredients:

3 1/2 ounces        tilapia
                    = (or salmon, grouper, halibut,
                    sea bass or swordfish)
3     tablespoons   store-bought blue cheese - (to 4)
1/2   cup           butter
                    Chopped fresh parsley
                    Lemon wedge
                    Fish seasoning
Directions: one line for each direction. When saved the lines will be numbered.
  1. Place fillet darkest or skin-side down in a pie pan. Brush presentation side of fillet with buttersauce. Shake a heavy coating of blackened fish seasoning onto fillet.

  2. Brush the blackening pan with buttersauce. Carefully flip seasoned fish onto blackening pan and brush dark side of fillet with buttersauce.

  3. During the last 2 to 3 minutes of cooking add blue cheese dressing and finish cooking fish until 150 degrees and dressing has browned slightly.

  4. Garnish with fresh chopped parsley and lemon wedge.

  5. This recipe yields 1 serving.
