Ingredients:

1     pound         fresh tuna steak - (1" thick)
2     tablespoons   extra-virgin olive oil - (to 3)
1     tablespoon    finely-chopped shallots
                    Freshly-ground black pepper
1     cup           grape tomatoes
1     cup           medium-size cut asparagus (1 1/2" lengths)
4     cups          frisée lettuce
1/2   cup           Shallot Cider Vinaigrette
2     tablespoons   finely-chopped fresh chives
Directions: one line for each direction. When saved the lines will be numbered.
  1. Marinate the tuna in the oil, shallots and pepper for 15 minutes.

  2. Place a nonstick skillet over medium heat. Sear the tuna on one side until lightly browned, about 4 minutes. Turn and sear for 3 minutes more or until cooked to desired doneness. Let rest for 5 minutes.

  3. Toss the tomatoes, asparagus and frisée with the vinaigrette and mound in the center of 4 dinner plates.

  4. Thinly slice the tuna, then fan the slices over the salads. Drizzle with 2 teaspoons of the remaining vinaigrette. Garnish the plates evenly with the chives.

  5. This recipe yields 4 servings.

  6. Per serving: 330 calories, 7g carbohydrate, 29g protein, 22g fat, 50mg cholesterol.

  7. Comments: While the tuna sears, its side turns a bluish-pink — the signal that it is cooked perfectly.
