Ingredients:

2     cups          wild rice
1     cup           cooked long-grain rice
2     tablespoons   canola oil
1     cup           diced (1/4") celery
1     cup           diced (1/4") onions
1     cup           dried cherries
1     tablespoon    finely-grated orange zest
1     teaspoon      dried thyme
1     cup           pecan halves
                    Salt
                    Freshly-ground black pepper
1/2   cup           chopped fresh mint leaves
Directions: one line for each direction. When saved the lines will be numbered.
  1. Bring 4 cups of salted water to a boil in a heavy saucepan. Add the wild rice, reduce the heat to medium-low and continue to boil for 40 minutes, uncovered, adding more boiling water if necessary, until the rice is tender but not mushy. Drain and place in a large bowl. Toss with the cooked long-grain rice.

  2. Heat the oil in a nonstick skillet over low heat. Add the celery, onions, cherries, orange zest, thyme and pecans; cook, stirring occasionally until softened, about 10 to 15 minutes. Toss into the bowl with the rice. Season with salt and pepper. Stir in the mint leaves.

  3. Fill the center of the rack of lamb with about 4 cups of the rice, as directed.

  4. To reheat any remaining rice, place in an ovenproof dish, cover with aluminum foil and put in a 350 degree oven for 15 to 20 minutes. Serve alongside the roast.

  5. This recipe yields 8 servings.

  6. Per serving: 380 calories, 56g carbohydrate, 9g protein, 14g fat, no cholesterol.

  7. Comments: To lighten the flavor of wild rice, which can be dense, I mix it with some white rice. This works especially well when being served with a succulent meat. Try to find fresh mint.
