Ingredients:

1/4   cup           extra-virgin olive oil
2     slices        Italian peasant bread, 2" thick
1/2   pound         prosciutto
1 1/2 pounds        lean baby lamb leg or shoulder
12                  sage leaves
                    Salt
                    Freshly-ground black pepper
Directions: one line for each direction. When saved the lines will be numbered.
  1. Preheat the oven to 400 degrees.

  2. In a skillet, heat the olive oil until almost smoking. Add the bread cubes and fry lightly on all sides. Remove to a plate lined with paper towels to drain.

  3. Thread 4 wooden skewers with the bread cubes, prosciutto, lamb and sage leaves until all ingredients are used up. Season with salt and pepper, to taste, and place on a broiling pan.

  4. Broil in the oven or grill 15 minutes or until all ingredients are crisp.

  5. This recipe yields 4 servings.
