Ingredients:

1/2   pound         goat cheese
2     teaspoons     olive oil
1/2                 crusty bread loaf of your choice
2     cups          lettuce, arugula or endive
2     large         tomatoes
1                   red onion
Directions: one line for each direction. When saved the lines will be numbered.
  1. Heat goat cheese in microwave 40 seconds, then stir.

  2. Dribble 1/2 teaspoon oil and 1 tablespoon cheese on 1 slice bread. Top with lettuce, tomato and onion. Spoon more goat cheese on top. Repeat to make 3 more sandwiches.

  3. This recipe yields 4 servings.

  4. Each serving: 404 calories; 623 mg sodium; 28 mg cholesterol; 17 grams fat; 46 grams carbohydrates; 18 grams protein; 0.90 gram fiber.
