1 cup chopped tomatoes
1/4 cup chopped red onion
1 cup diced mango
1/2 jalapeņo
1 garlic clove
1 tablespoon lemon juice
1/2 teaspoon minced oregano
1/4 teaspoon salt
12 corn tortillas
3/4 pound Teleme cheese
12 cilantro sprigs
Directions: one line for each direction. When saved the lines will be numbered.
Combine tomatoes, onion, mango, jalapeņo, garlic, lemon juice, oregano and salt in small bowl. Let stand 30 minutes for flavors to develop.
Heat tortillas, one at a time, on top of open gas burner, turning with tongs until tortilla is toasted on both sides, 30 seconds to 1 minute per side. Top each hot tortilla with 1 tablespoon Teleme cheese, spreading slightly. Spoon 1 tablespoon mango salsa over cheese and top with cilantro sprig.
