Ingredients:

                    === MEAT ===
1     pound         flank steak
1                   white onion
1     tablespoon    salt
1     teaspoon      freshly-ground black pepper
                    === EGGS ===
1/4   cup           corn oil
1                   white onion
1                   green bell pepper
1                   seeded jalapeño
2                   tomatoes
12                  eggs
4     teaspoons     hot pepper sauce
1     teaspoon      salt
1     teaspoon      freshly-ground black pepper
12                  flour tortillas
                    Ketchup or salsa
Directions: one line for each direction. When saved the lines will be numbered.
  1. Wrap tortillas in foil and place in 250 degree oven to warm. To cook meat, boil in large pot with onion, salt and pepper, about one hour or until cooked through. Cut into 2-inch sections, going against grain of meat; shred meat and set aside.

  2. In large skillet, sauté onions, pepper and jalapeño until tender. Add meat and tomatoes and cook for about two minutes, just until warm.

  3. In large bowl, lightly beat eggs with hot pepper sauce, salt and pepper. Add to meat mixture and scramble. Serve with flour tortillas and ketchup or salsa.

  4. This recipe yields 6 servings.
