Ingredients:

1 1/2 cups          water
1/2   teaspoon      freshly-grated lemon zest
1/2   teaspoon      dried thyme
1     cup           couscous
1/2   cup           minced fresh parsley leaves - (packed)
2     tablespoons   olive oil
                    Fresh lemon juice
                    Salt
                    Freshly-ground black pepper
Directions: one line for each direction. When saved the lines will be numbered.
  1. In a kettle bring the water to a boil. Pour over the zest, thyme and couscous. Let the mixture stand, covered, for 5 minutes. Fluff it with a fork, and stir in the parsley, oil, lemon juice, and salt and pepper.

  2. This recipe yields 4 servings.
