Ingredients:

1     cup           all-purpose flour
3/4   cup           medium-ground yellow cornmeal
1/2   cup           grated pepper jack - (1 1/2 oz)
1     teaspoon      baking powder
1     teaspoon      salt
2     large         eggs
1     cup           milk
3     tablespoons   honey
1/4   cup           unsalted butter - (1/2 stick)
                    a little more for buttering the pan
Directions: one line for each direction. When saved the lines will be numbered.
  1. To make the cornbread, preheat the oven to 425 degrees. Butter an 8-inch square baking dish.

  2. Combine the flour, cornmeal, cheese, baking powder, and salt in a large bowl.

  3. In a mixing bowl, whisk together the eggs, milk, and honey. Add the wet ingredients to the dry ingredients, stirring until just combined. Add the melted butter and stir into the mixture. Pour into the prepared pan and bake until a toothpick comes out clean, 15 to 20 minutes.

  4. This recipe yields 16 or more servings.

  5. Cook's Note: You can make the cornbread and store it in the freezer, covered tightly in plastic wrap, for a few weeks.
