Ingredients:

3     pounds        cut-up chicken - (to 3 1/2)
                    Salt
                    Freshly-ground black pepper
                    Dried thyme
1/4   pound         bacon
2     tablespoons   oil
1     small         onion
1/2   pound         mushrooms
2                   apples
                    sliced
1/4   cup           dark rum
1/2   cup           apple juice
2     tablespoons   finely-chopped parsley
1/2   cup           cream
Directions: one line for each direction. When saved the lines will be numbered.
  1. Season chicken. Fry bacon until crisp. Set aside. Add oil and heat. Brown chicken pieces on all sides. Add bacon, mushrooms, onion and apple.

  2. Heat rum, ignite and pour flaming over chicken. Add apple juice, cover and simmer about 40 minutes or until tender.

  3. Correct seasoning and arrange on a heated platter. Stir cream into sauce and heat to boiling point. Pour over chicken. Garnish with parsley and serve with rice.

  4. This recipe yields 4 to 6 servings.
